Our story begins with a deep-rooted love for Cajun cuisine. Raised in South Louisiana, our founder, Chef C.J. Hubbell, grew up surrounded by the captivating aromas and bold flavors that define Cajun cooking. He developed a passion for the culinary arts from an early age, learning the traditional recipes and techniques passed down through generations of his Cajun family and friends. His style of cooking was influenced by Chefs and cooks such as Randy Dugas, Liz Lemaire, Joe Langston & Will Landry to name a few.
Driven by a desire to share this extraordinary cuisine with a wider audience, Chef C.J. Hubbell founded Cajun-Hub Catering. With a team of talented staff, we set out on a mission to bring the essence of South Louisiana to people’s celebrations, events, and gatherings.
Meet C.J. Hubbell, a culinary virtuoso who has dedicated a huge portion of the past 25 years of his life to mastering the art of Cajun cuisine. He was raised in the heart of Louisiana, C.J.’s passion for cooking was ignited at a young age when he witnessed the magic that unfolded in different family members and friend’s kitchens. It was there that he first encountered the intoxicating aromas and flavors that would forever shape his culinary journey.
From an early age, C.J. found himself drawn to the vibrant Cajun culture that permeated every aspect of his hometown of New Iberia. Inspired by Cajun Chefs, family and friends, who had passed down their culinary secrets through generations, C.J. immersed himself in the rich tapestry of Cajun cooking. He sought out the guidance of seasoned old Cajun cooks and renowned chefs, determined to uncover the nuances of this remarkable cuisine.
Under the tutelage of these culinary maestros, C.J. honed his skills and developed an intimate understanding of Cajun ingredients, techniques, and flavor profiles. From perfectly seasoned roux to the bold combination of spices that define Cajun dishes, he absorbed every detail with unwavering dedication. He learned to dance with ingredients like Shrimp, crawfish, andouille sausage, and trinity vegetables, creating symphonies of flavor that delighted the palate.

Meet Vickie Hubbell, C.J.’s better half, a Cajun girl with a passion for her husband and Cajun food. Born and raised in New Iberia, Louisiana, Vickie’s love for cooking was nurtured by C.J. As a teenager, she soaked up the flavors, techniques, and traditions that surrounded her, instilling in her a profound appreciation for Cajun cuisine.
Vickie’s adventurous spirit and deep-rooted love for Cajun cuisine and C.J., made her wholeheartedly embrace the opportunity to start a catering company with him. She is an integral part of the company’s development, working alongside C.J. to bring their shared vision to life. Together, they blended traditional Cajun techniques with contemporary flair, crafting a menu that honored their heritage while enticing the taste buds of their patrons.
